Start by boiling your 2 chicken breasts. In a medium pot, bring some water to a boil, then gently place the breasts in the water. This takes about 12 minutes, but check on it — it can take a little more or less depending on the thickness and size of your breasts.
yum!Method
Once cooked through, take them out of the water and let them cool. When cool enough, shred them apart with 2 forks and place in a mixing bowl.

Chop your red pepper into small cubes, discarding the centre and seeds.
Chop your pickles and purple onion into small bits as well, then add them to the bowl with the chicken.
Add your mayo, mustard, olive oil, vinegar, honey, salt and pepper and mix until well combined. It shouldn't be dry — it should feel well mixed, like a dip you could scoop up with chips.
Adjust your seasoning as you wish: a little sweeter, add more honey; a little tangier, add more vinegar…
Mona's tips
— MonaFor a shortcut, use a rotisserie chicken instead of boiling your own and just shred it.
A hack to shred your chicken faster is a hand mixer or KitchenAid stand mixer. It does the job for you — but it adds more dishes to do.
